What is mofongo? mofongo is fried and smashed plantains with garlic and seasonings. Because you fry the plaintains , you wind up with a mash that’s full of crispy pieces and soft pieces and lots of flavor. INGREDIENTS : 1 tablespoon olive oil 2 cloves garlic minced Juice of 1 lime Cilantro , chopped Salt to taste 1 green plantain Oil 4 cloves garlic 2 - 3 tablespoons vegan butter In a small jar add the olive oil, lime, cilantro and salt and stir together Wash the plantain and soak it it very hot
