An easy vegetable / vegetarian curry that makes a cheap and healthy meal. It uses basic store cupboard ingredients so is very quick and easy to cook. Here I'ved used baby potatoes, carrots, aubergine, courgette, broccoli, cabbage, tomatoes and bell peppers. You can use any vegetables of your choice, add the veg that cooks the longest first, e.g. potatoes, carrots, add the courgette and aubergine last. I served my curry with roti and mango atchar.
